Finding and rediscovering that purpose and path in life can take time. This is why I’m always intrigued with ways to tap into finding and keeping on a path that is self-fulfilling.

In author Felix Ruiz’s self-help book The Path: How to Become Your Best Self, he addresses ways that people who are struggling in life can become the person they truly want to be. He calls this finding your “best self”. The become is designed to help you become the version of the person you can be proud of. Felix even shares how he used his techniques to motivate himself to write this book and put his advice into practice.

NEW DIY SALADS THAT MAKE THE MEAL


We’ve discussed composed salads and alternative ones. Now, I’ve got to tell you there’s a new guy in town making waves by combining produce in ways that make salads stars in our diets. They’re innovative in the wide range of ingredients used and for the complete meals they so effortlessly provide.  As in alternative creations, all sorts of items are included, with less emphasis on the leafy greens, but they are not chopped or diced as they used to be. The ingredients are presented in chunks, pieces, or more often, in thin slices or shaved. The mandolin replaces the knife, being actually easier and quicker to use.

Like composed salads, these accompany meat, constituting a full plated entrée but that meat is a lean cut, a fish fillet, a cutlet or loin chop, lightly grilled, broiled or sautéed just prior to serving, although this is a great way to serve well-trimmed slices of roast too. The dish is further fortified by including nuts, seeds, grains such as farro, quinoa, bulgur, kasha, rice, even “country croutons”, pieces of torn artesian bread turning it into a fully nourishing, attractive  meal. 

The ingredients can be prepared ahead, kept in chilled water, ideally tossed with a vinaigrette just before serving and plated spontaneously draped slightly over the meat not positioned rigidly to one side as before. The inviting impression is of freshness and casual elegance.

As for the actual ingredients, start with the thought that things that go together hot, will do so cold. The Italian gang, tomatoes, zucchini, onions and fennel make a wonderful salad, when grape tomatoes are split, the other things shaved and yes, the zucchini raw. Add fresh basil and oregano, some quinoa and perhaps Parmesan or Romano shavings, grilled chicken or slices of beef and it’s a full meal. 

Have fun thinking outside the box too. Many fruits and vegetables combine well: tomatoes, watermelon and avocados, cantaloupe, peppers and onions, plums, radishes and cucumber are a few. Lesser greens like watercress, sprouts and baby spinach are great compliments for these combos, rather than the usual lettuces. Herbs are good too. Don’t buy a bunch, for garnish, then wonder how to use the rest. Parsley, especially the flat leaf, cilantro and basil make great salad greens.

Then it’s simply a matter of deciding what grain, cheese, seeds or nuts, toasted please, best go with the other ingredients, appeal to you, perhaps you have on hand or want to get to round out the salad, turning it into the chief component of the main course rather than a side, I’ve found the grains present no problem in taking up prep time either. They can be cooked ahead, frozen in salad sized portions and thawed when needed.

 I had leftover fennel crusted pork tenderloin this week and made one of these salads with no recipe, just the meat and some cooked wild rice. Tossing rice, thinly sliced carrot, zucchini onion, bell pepper and grape tomatoes with a couple of torn Romaine leaves, fresh basil and oregano in a light vinaigrette, and serving it over the sliced cold pork, was delicious. The interesting thing was how little of each ingredient was required to create a fully satisfying meal.

Let your creative side loose, listen to the inner voice that telling you what tastes good together and build yourself a salad. You might discover combinations to enjoy all year.  The media is full of recipes for these “complete” salads and serving suggestions. Living a happy, resilient and optimistic life is a wonderful concept. Being happy is good for your health. It can protect you from the stresses of life if you are able to channel your stress into a more positive and blissful perspective. 

Stress is linked to top causes of death such as heart disease, cancer and stroke. Stress can be derived from the anxiety of change. However, we have to remember the old adage “The only constant in life is change.' In our life we have the power to make the changes if we want to. Even if we find ourselves in an unbearable situation we can always find solace in the knowledge that it too will soon change. 

To be happy amidst all of this change is relatively easy…just decide to be a happy person. Abraham Lincoln observed that most people for most of the time can choose how happy or stressed, how relaxed or troubled, how bright or dull their outlook to be. The choice is simple really, choose to be happy.

Be Grateful – An attitude of gratitude requires us to make conscious decisions to be thankful. In reality, we have so much to be thankful for. Thank the bus driver for bringing your kids home safely, thank the chef for a wonderful dinner with your spouse, and thank the guy who handles your dry cleaning. Also thank the mailman for bringing you your mails, thank the policeman for making your place safe and thank God for being alive.

Reduce the News – Modern day news programs thrive on sharing some of the most horrifying stories from around the world. News is stressful. Get less of it. Some people just can't start their day without their daily dose of news. Think about it, 99% of the news we hear or read is bad news. Starting the day with bad news does not seem to be a sensible thing to do.

Make a Spiritual Connection - A religious connection is also recommended. Being part of a religious group with its singing, sacraments, chanting, prayers and meditations foster inner peace. 

Gain Control Over Your Time - Time is invaluable. You can never get back the minutes you’ve wasted focusing on something negative. Time is too important to waste. Time management can be viewed as a list of rules that involves scheduling, setting goals, planning, creating lists of things to do and prioritizing. 

Laugh Every Day – Life doesn’t have to be so serious. Find the joy by seeking out something (or someone) who makes you laugh. Heard a good joke? Tell your friends or family about it. As we all know -'Laughter is the best medicine'.
  
Express Your Feelings – Don’t be shy. Tell the people in your life how you feel about them. They will most likely reciprocate your actions. Creating these connections with others in our lives can make us feel happy. Don’t hold onto anger or frustrations, this is bad for your health. Instead find ways of expressing them in a way that will not cause more injury or hurt to anyone.
  
Complete Satisfying Work – Personal satisfaction comes from completing tasks and working hard. Think about your goals and take actions to work towards those goals. The feeling of completing a task can give you a feeling of being competent. Accomplishments are necessary for all of us, they give us a sense of value. Work on things that you feel worthy of your time. Be satisfied when they are complete – even if it just a load of laundry or re-organizing a closet.

Learn Something New - Learning is a joyful exercise. Commit to learning something new every day.  Learning also makes us expand and broaden our horizons and give us more opportunities in the future. 

Get Active - Run, jog, walk and do other things that your body was made for. Feel alive. Find one activity you can do that stimulates your endorphins. Exercising has been proven to improve people’s moods. 

Evict Negativity – Don’t let others bring you down. If you find yourself exposed to negative people, negative elements, or negative environments, evict that negativity from your life. By avoiding exposure to these negative elements you take control of not allowing them to impact your chosen journey to be happy. 

These are the few simple things you can do every day to be happy. 

And always remember the quote from Abraham Lincoln, he says that, "Most people are about as happy as they make up their minds to be."

My blog Kitchen $centse is based on my experience that the best way to economize on food bills is through organized planning and informed shopping. Following this thought I adopted:” Making wonderful scents, while saving cents, by using sense” as its motto.

I’ve always liked to cook, so in 1999, frustrated by an “Empty Nest”, I trained, joined the U.S.P.C.A. and opened a personal chef service. America was exploring different cuisines while adjusting to the onset of consistently rising food prices. Food became a popular subject of conversation, either sharing new discoveries or coping with expenses.  I heard opinions from my generation, our children, and my clients of all ages. 

The common thread was people wanting an increasing variety of flavorful dishes while experiencing increasing pressure to monitor spending. I had already faced having to quote a price, offer unlimited entrees, assure quality, buy retail and meet my bottom line. Chef training taught me to make detailed lists of planned menus and not deviate when shopping. This eliminates extra spending on impulses or duplications, which can stockpile and expire on the pantry shelf. Obviously, organized planning is an economy measure.

Another sensible practice is learning about the ingredients you’re using especially when first exploring a new cuisine. Don’t blindly buy every item in a recipe. See if some can substitute for others; mace, the nutmeg casing, has a  similar but stronger flavor and costs more. Asian cuisines favor spice blends, some easily duplicated from ordinary pantry supplies. Delay buying products until you’re sure you like them and/or their native cuisines. 

The same advice holds for all items on your shopping list. Blind sale or bulk buying, is wasting money if you don’t like or won’t use the product. Be cautious trying other brands and above all know the amounts you require. Overbuying is the chief excess food expenditure. So informed shopping is another means of controlling food expensed.

Practicing organized planning and informed shopping, which are simply sensible behavior modifications, rather than penny-pinching or bargain hunting, provides for retention of quality. Best of all, it insulates against “register shock”. This is truly using sense to save cents. 

Planning meals for several days ahead, I recommend a week, and knowing everything needed is on hand is very relaxing. It allows for ease in prepping, cooking and presenting a meal. One is free to focus on creating those “wonderful scents’ that arouse hunger and draw everyone to the table to eat. Usually earns you a few compliments too.

DIY SALAD DRESSINGS TO MAKE YOUR SALADS SING


Ingredients make the salad, but the dressing makes it sing...and sing in different keys, depending on the choice of dressing. Being able to make your own dressing, rather than depending on commercial brands, is like arranging the song to suit your mood. Last week, while writing about different ideas for side salads, I realized that dressings would be a good topic. So here I am with the results of my investigation of salad dressings.

To start,  let’s talk about the commercial products available. If you include the generic, ethnic, gourmet, as well as the big and small brand names the number is only surpassed by the number of flavor varieties to choose from. There seems to be something for everyone, so why make your own? 

Well, first the commercial brands all contain artificial ingredients, preservatives, and generally a high amount of salt, sugar and fat. Making them yourself gives you control over these things. Second, commercial dressings usually are close to the flavor ceiling. They won’t accept any taste adjustments .you might want to make. Third, the cost is rising, and basic, simple dressing ingredients are found in most homes, especially those for vinaigrette. Why pay to have several bottles open, when you can make them fresh as needed using items you keep in supply?

Please understand I’m not going DIY on salad dressings.  Many can’t be easily duplicated without a specific flavoring agent. It’s senseless to buy such products and only use a fraction, just as it is to buy several ingredients in an attempt to recreate a product you like. However, for the everyday salad side, snack or light meal, making the dressing is easy, economical and fun.  Most entrée salad recipes include directions for a specific dressing, Cobb and Nicoise Salads for example, not to mention all the grilled chicken ones out there, so you probably already have experience.

In most countries, the salad’s ingredients determine its dressing and a “house” salad is dressed as the chef decrees. Americans expect to be offered a selection of dressings especially for a side or light meal salad. If having this option appeals to you, make several vinaigrettes with different infusions to use alone or have ready to add other ingredients to make more complex dressings. As always, the possibilities are endless. Just use your imagination. 

Following are basic directions for vinaigrettes and other easy dressings, with suggestions for variations. Also, don’t forget that dressings can double as marinades. Simply reserve enough to dress the greens, use the rest to flavor the meat. 

Basic Vinaigrette
The fundamental ratio is 1 part vinegar to 3 parts oil, with salt and pepper to taste. Dissolve seasonings in vinegar. If making in a jar, add oil in 3 parts, shaking between. If using a blender or bowl add oil in a thin stream with machine running or constantly stirring.

A Simple Dressing Allowing Variations   
Double basic proportions of oil and vinegar
1 small shallot or 1/3 a small onion – minced
½ garlic clove- minced
½ tsp. each salt, pepper and Dijon mustard
OPTIONAL 1-2 tsp. dried herbs of choice like an Italian blend

For Low-Fat replace 1/3 oil with juice, broth, fruit or vegetable puree. Tea lowers vinegar’s  acidity. Reducing oil content further thins the liquid too much to coat, requiring the addition of gelatin or cornstarch..
